What happens when you decide you don’t have the time to bake whole loaves but you still want to get all the flavors of a favorite dessert? Easy, you turn it into a pancake recipe!

First off, let us focus on the similarities between these two beloved desserts. Both pancake recipes and banana bread recipes call for milk, eggs, and flour. Also, they can both be prepared with healthier vegan or gluten free substitutes without it affecting their deliciousness. (say, you can prepare them with almond and coconut milk, flax or chia eggs, and a nutty flour).

Now, on to the preparation. When it comes to the prep time, regardless of whether you are preparing pancakes or a banana loaf it surely won’t take you longer than 15 minutes to prepare the batters. However, the thing that makes pancakes so appealing to me is that you can enjoy the result way faster than with the banana loaf. Frying the pancakes will only take up a fraction of the time you’d need to bake a banana bread, so it is because of this sole feature that pancakes win this battle.

If you think carefully about it though, pancake recipes are pretty quick to prepare, banana bread recipes, on the other hand, are way easier to prepare. Why? Well, you just pour the batter into a loaf pan and you wait for the oven to work its magic. With pancakes, you will have to flip and cook them batch after batch. And one last thing to consider, the aroma of the baked banana bread will be more inviting that that of the pancakes, so maybe it is for the best if you decide which dessert to prepare by yourselves.

The Best Banana Bread Pancake Recipe

Before giving out the best recipe, let me say a thing or two about bananas and their many health benefits. Bananas abound with potassium and this means they will help lower your blood pressure. Moreover, bananas contain nutrients that moderate the sugar levels in our blood and being rich in fiber they will make you feel satiated without being bloated. So, if these are not reason enough to start consuming bananas right away, maybe the following recipe will convince you otherwise.

To prepare the best banana pancake recipe you will definitely need, you’ve guessed it, bananas. Be sure to get the ripest bananas possible and once you have them mashed, they should fit into one and a half cups. And that’s about it, for the rest follow the recipe below:

  • 2 cups of all-purpose flour

  • 1 teaspoon of baking powder

  • ½ teaspoon of baking soda

  • ½ teaspoon of salt

  • ½ teaspoon of ground cinnamon

  • ¼ cup of sour cream

  • ¾ cup of buttermilk

  • 6 tablespoons of granulated sugar

  • 1 ½ cups of mashed overripe bananas

  • ½ teaspoon of vanilla extract

  • 1 large egg

  • 4 tablespoons of unsalted butter, melted

Preheat a griddle or a non-stick pan over medium high temperature (around 350 F). In the meantime, get a large bowl and add the dry ingredients (except for the sugar) in. In a separate bowl whisk the eggs together with the buttermilk, sour cream, mashed bananas, egg, vanilla, melted butter and the sugar.

Proceed to add the wet ingredient into the dry ones by continually whisking. Whisk until well combined (leave a few lumps to ensure a fluffy pancake). Go ahead and fry the pancakes for around 2 minutes per side, or until they are golden brown.
