The process of preparing them is a breeze: you just mash a medium large banana until it looks like a pudding would, then add 2 eggs and whisk everything together. Once you’ve prepared the first batch, you’ll see that pancaking is not all that difficult. And once you start feeling comfortable with the frying pan and all the whisking, it is time to go for slightly more difficult pancake recipes.
First thing first, you will need to prepare a pancake mix that you will use time and time again. The only things you’ll need are a bowl to mix the ingredients in and an air-tight container to store the pancake mix. Combine one and a half cups of all-purpose flour, 2 tablespoons of sugar, 2 teaspoons of baking powder, half a teaspoon of baking soda and the same amount of salt.
If you love bacon, then you must prepare the bacon in batter pancakes. For this task you can use your very own pre-ready mix (2 cups of it), then you will need 12 slices of thick bacon, a cup of milk and 2 eggs.
Cook the bacon over a tablespoon of vegetable oil until crispy and then place it on paper towels to drain. Then go ahead and prepare the pancake batter by adding your mix and whisking it with the milk and the eggs. Now, place two strips of bacon on the skillet, making sure there is enough room in between them. Pour the batter all around the strips and cook for 2-3 minutes per side.
Serve the bacon pancakes with maple syrup and prepare yourself (and your taste buds) for a combination of contrasts. No matter how oxymoronic it might sound, nothing can beat this!
