Pancakes for an Impeccable Vision

It is common knowledge that the solution to an impaired eyesight is eating foods that contain beta carotene. This is so because it gets converted into vitamin A, a vitamin crucial for good vision.

To obtain vitamin A one should be consuming green, orange or yellow fruits and vegetables. And if this has not sprung to your mind by now, the name carotene (from Latin carota-carrot) implies it, the food that abounds with it are carrots!

The daily intake of vitamin A should be:

900 mcg per day for men.

700 mcg per day for women.

Now, carrots are not something you consume raw, although sometimes I crave a crunchy bite. This is why we have to find alternative ways of incorporating them into our diets. And I am not talking about the many great, mostly savory recipes out there, but incorporating carrots in America’s favorite breakfast dish: pancakes!

Carrots and Pancakes

The best thing about carrots is they can easily get included into both sweet and savory batters. And there are three main reasons behind this:

  • They make for an interesting texture

  • They give an unusual orange color

  • They pair perfectly well with the regular pancake ingredients

Sweet

These babies are the best of two worlds in that they are a dessert turned into breakfast. This is most probably the best way to describe these pancakes. Much like carrot cake, these are sweet and scrumptious, and as fluffy as ever! Top them with some pecans and maple cream cheese and surprise your family with a cake turned into a pancake.

Savory

The Savory Carrot and Zucchini Pancakes are one of those recipes you prepare once, and can’t stop preparing until you and your family get fed up with it. In less than half an hour you will have a pancake stack fit to be your lunch or even light dinner. With all the flavor these fritters get from the zucchini and carrots, but also the garlic, onions, and parsley, they are definitely going to leave you with the sensation of having eaten a proper lunch.

Vegan Carrot Pancakes

If you are a vegan, or a vegan friend is coming over for dinner, and still want to get your daily dose of vitamin A through pancakes, then the Vegan Carrot Coconut Pancakes are the right choice for you.

The finely shredded unsweetened coconut and the finely grated carrots give the best texture and taste. Plus, these get extra points for being dairy free, so this means they are a way healthier version of the regular pancake. An extra plus is they will only take 20 minutes to prepare.
