Celebrate The National Peanut Butter Day with Some Scrumptious Pancakes

Did you know that January 24th marks the observation of the National Peanut Butter Day? Well, now you know it. I don’t know what is it with me and food holidays but I can say that I have become obsessed. Only a few days ago I prepared some granola bars and spent January 19th popcorning, so yes, it is official I am a foodie, and I live by the food calendar! Since the preparation of peanut butter and jelly sandwiches is pretty straight forward, the next most famous dish that pairs perfectly well with peanut butter is pancakes!

Whole Wheat Pancakes

Not only will these be tasty, but they are also way healthier for your overall well-being. With much more fiber than regular flour and diabetes-lowering properties, whole wheat flour is a way better version. Pair it with some almond milk and chocolate chips and you will get the most scrumptious pancake stack you will ever taste. For some more peanut butter sensation, feel free to drizzle extra on top, the same goes for the chocolate chips. Check out some other healthy pancake recipes.

Flaxseed Pancakes

If you want to satiate your sweet tooth without the burden of overeating or the fear of gaining extra weight, then you should go for pancakes made with flaxseed and oats. You will need to replace the regular eggs with a flax seed egg. To do this, you will need a tablespoon of flaxseed meal and 2 tablespoons of water, simple as that. While on the topic of homemade things, you can even make your own oat flour. Just put a cup of oats in a blender and you will get half a cup of flour. Continue to making the pancakes as you would usually make them, and then top with maple syrup, honey or agave nectar. Add a tablespoon of natural salted peanut butter in the batter and use some more as a topping, it can be either in a crunchy or creamy form.

Reese’s Pancakes

Any talk about peanut butter cannot go without a mention of the best candies ever: Reese’s. These peanut butter cups have been a childhood favorite for me, and any other American for that matter. This is why the Reese’s Syrup and Double Chocolate Pancakes I found have become a staple in my household. You can either go for a simple pancake recipe, or go for this chocolate one, 2 tablespoons of Hershey's cocoa and some chocolate chips will provide for the double chocolate part, but the syrup is the king of the recipe. You will need 6 Reese's peanut butter cups, and to celebrate properly spread some peanut butter between each pancake in the stack. Be careful not to overeat, though J.
